"Every coffee product we tried smelled like dessert. Coffee candles, coffee fresheners, coffee everything - all vanilla, caramel and sugar, none of them anything like standing in a roastery at opening time. That smell is dark cocoa, hot metal, toasted nuts, a little bitterness. It's not sweet at all. So we built it on the roast instead of the syrup, kept it dry so it could never go sour the way a forgotten cup does, and dosed it low - because a warm scent in a hot car doubles on you, and nothing ruins a good smell faster than too much of it."
